Ingredients:
- 1 cup red lentils
- 1 tbsp Madras spice blend
- 1 onion, diced
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tbsp olive oil
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and cook until translucent.
- Stir in the garlic and Madras spice blend, cooking for another minute.
- Add the lentils, diced tomatoes, and vegetable broth.
- Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender.
- Serve hot with a squeeze of lemon.
