Madras Spiced Lentil Soup

Ingredients:

  • 1 cup red lentils
  • 1 tbsp Madras spice blend
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tbsp olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and cook until translucent.
  3. Stir in the garlic and Madras spice blend, cooking for another minute.
  4. Add the lentils, diced tomatoes, and vegetable broth.
  5. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender.
  6. Serve hot with a squeeze of lemon.
