Ingredients:
- 1 cup mixed vegetables (bell peppers, carrots, broccoli)
- 1/2 onion, sliced
- 1 tbsp tikka masala spice
- 1/2 cup coconut milk
- 1 tbsp olive oil
- Salt to taste
Instructions:
- Heat olive oil in a pan over medium heat.
- Add the sliced onion and cook until soft.
- Add the mixed vegetables and stir-fry for 5 minutes.
- Sprinkle the tikka masala spice over the veggies and mix well.
- Pour in the coconut milk and simmer for 3-5 minutes until the sauce thickens.
- Serve hot with rice or quinoa.
