Tikka Masala Veggie Stir-Fry

Ingredients:

  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • 1/2 onion, sliced
  • 1 tbsp tikka masala spice
  • 1/2 cup coconut milk
  • 1 tbsp olive oil
  • Salt to taste

Instructions:

  1. Heat olive oil in a pan over medium heat.
  2. Add the sliced onion and cook until soft.
  3. Add the mixed vegetables and stir-fry for 5 minutes.
  4. Sprinkle the tikka masala spice over the veggies and mix well.
  5. Pour in the coconut milk and simmer for 3-5 minutes until the sauce thickens.
  6. Serve hot with rice or quinoa.
